Description

A delicious and healthy dish featuring grilled chicken coated in a honey mustard sauce served alongside a hearty farro salad with fresh vegetables.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 1 cup farro
  • 2 1/2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill or grill pan over medium heat.
  2. In a small bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, salt, and pepper.
  3. Brush the mixture over the chicken breasts.
  4. Grill the chicken for 5–7 minutes on each side, until cooked through and juices run clear. Remove from heat and let it rest.
  5. Meanwhile, cook the farro: bring water or broth to a boil, add the farro, reduce the heat, and simmer for 20–25 minutes until tender. Drain any excess liquid.
  6. In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, red onion, parsley, olive oil, lemon juice, salt, and pepper. Toss to combine.
  7. Serve the grilled chicken on a plate with the farro salad alongside.

Notes

Let the chicken rest after grilling for a tender result. Feel free to add your favorite vegetables to the farro salad.
