A delicious and healthy dish featuring grilled chicken coated in a honey mustard sauce served alongside a hearty farro salad with fresh vegetables.

- 4 boneless, skinless chicken breasts
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 1 cup farro
- 2 1/2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely diced
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Preheat the grill or grill pan over medium heat.
- In a small bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, salt, and pepper.
- Brush the mixture over the chicken breasts.
- Grill the chicken for 5–7 minutes on each side, until cooked through and juices run clear. Remove from heat and let it rest.
- Meanwhile, cook the farro: bring water or broth to a boil, add the farro, reduce the heat, and simmer for 20–25 minutes until tender. Drain any excess liquid.
- In a large bowl, combine the cooked farro, cherry tomatoes, cucumber, red onion, parsley, olive oil, lemon juice, salt, and pepper. Toss to combine.
- Serve the grilled chicken on a plate with the farro salad alongside.
Notes
Let the chicken rest after grilling for a tender result. Feel free to add your favorite vegetables to the farro salad.
