- 2 boneless chicken breasts
- 3 tbsp honey
- 2 tbsp soy sauce
- Juice + zest of 1 lime
- 1 garlic clove, minced
- Salt & pepper to taste
- 1 cup cooked white rice
- 2 tbsp chopped cilantro
- Juice of 1/2 lime
- 1 tbsp olive oil
- 1 avocado, diced
- 1 tbsp red onion, finely chopped
- 1/4 cup tomato, diced
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- Pinch of salt
Instructions
- Whisk together honey, soy sauce, lime juice and zest, garlic, salt, and pepper to create the marinade. Coat the chicken breasts and marinate for 30 minutes or overnight.
- Preheat the grill. Grill the marinated chicken for 5–6 minutes on each side until cooked through and caramelized.
- In a bowl, mix cooked rice with chopped cilantro and the juice of 1/2 lime. Press the rice mixture into a small bowl, then flip it onto a plate to form a rice stack.
- Layer the grilled chicken on top of the rice.
- For the avocado salsa, combine diced avocado, red onion, tomato, lime juice, chopped cilantro, and a pinch of salt in a bowl. Top the chicken with the salsa.
- Drizzle any remaining marinade or extra lime juice over the top for added flavor.
Notes
For extra flavor, let the chicken marinate overnight. Ensure the grill is hot before cooking the chicken for better searing.
