Ingredients

- 2 boneless, skinless chicken breasts
- 1 1/2 tbsp olive oil
- 2 tbsp honey
- Zest of 1 lime
- Juice of 1 lime
- Salt and pepper to taste
- 2 cups cooked rice
- 1 avocado, sliced
- 1/4 cup chopped cilantro (optional)
Instructions
- In a bowl, mix olive oil, honey, lime zest, lime juice, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill or pan-sear the chicken over medium heat until cooked through, about 6-7 minutes on each side.
- Once the chicken is cooked, let it rest for a few minutes, then slice it.
- In a serving dish, layer the cooked rice, sliced chicken, avocado and garnish with cilantro if desired.
- Drizzle any remaining marinade over the top and serve.
Notes
For more flavor, grill the chicken on a barbecue instead of pan-searing it. Adjust the amounts of honey and lime to suit your taste.
