Ingredients

- 1 lb boneless chicken thighs or breasts
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt & pepper, to taste
- 2 cups cooked jasmine or basmati rice
- 1/4 cup chopped cilantro
- 1 large avocado, diced
Instructions
- Marinate Chicken: In a bowl, mix honey, lime juice, olive oil, chili powder, garlic powder, salt, and pepper. Toss the chicken in the marinade and let it sit for 15–30 minutes.
- Cook Chicken: Grill or pan-sear the chicken over medium-high heat for about 4–5 minutes on each side until caramelized and cooked through.
- Prep Rice: In a separate bowl, toss the cooked rice with lime juice, chopped cilantro, and a pinch of salt.
- Make Avocado Salsa: In another bowl, gently mix the diced avocado with lime juice, cilantro, salt, and pepper.
- Assemble Stack: On plates, spoon the cilantro rice, layer the honey lime chicken on top, and finish with a generous scoop of avocado salsa.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep avocado separate to prevent browning.
