Description

A delightful dish combining juicy chicken marinated in a sweet and tangy sauce with fresh avocado and fluffy rice.


Ingredients

  • 1 lb boneless chicken thighs or breasts
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt & pepper, to taste
  • 2 cups cooked jasmine or basmati rice
  • 1/4 cup chopped cilantro
  • 1 large avocado, diced

Instructions

  1. Marinate Chicken: In a bowl, mix honey, lime juice, olive oil, chili powder, garlic powder, salt, and pepper. Toss the chicken in the marinade and let it sit for 15–30 minutes.
  2. Cook Chicken: Grill or pan-sear the chicken over medium-high heat for about 4–5 minutes on each side until caramelized and cooked through.
  3. Prep Rice: In a separate bowl, toss the cooked rice with lime juice, chopped cilantro, and a pinch of salt.
  4. Make Avocado Salsa: In another bowl, gently mix the diced avocado with lime juice, cilantro, salt, and pepper.
  5. Assemble Stack: On plates, spoon the cilantro rice, layer the honey lime chicken on top, and finish with a generous scoop of avocado salsa.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep avocado separate to prevent browning.
