- 2 chicken breasts (boneless, skinless)
- 1 1/2 tbsp olive oil
- 2 tbsp honey
- Zest of 1 lime
- Juice of 1 lime
- 1 avocado, sliced
- 2 cups cooked rice
- Salt and pepper to taste
- Optional: cilantro and lime wedges for garnish
Instructions
- In a bowl, mix together the olive oil, honey, lime zest, and lime juice.
- Marinate the chicken breasts in this mixture for at least 30 minutes.
- Heat a grill or skillet over medium heat and cook the chicken for about 6-7 minutes per side, or until fully cooked.
- Once cooked, slice the chicken.
- To assemble the stack, begin with a layer of rice, then add the sliced chicken and avocado.
- Repeat the layers until all ingredients are used.
- Season with salt and pepper and garnish with cilantro and lime wedges if desired.
Notes
For more flavor, marinate the chicken longer. Use brown rice for a healthier option.
