Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 1/2 tbsp olive oil
  • 2 tbsp honey
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 avocado, sliced
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Optional: cilantro and lime wedges for garnish

Instructions

  1. In a bowl, mix together the olive oil, honey, lime zest, and lime juice.
  2. Marinate the chicken breasts in this mixture for at least 30 minutes.
  3. Heat a grill or skillet over medium heat and cook the chicken for about 6-7 minutes per side, or until fully cooked.
  4. Once cooked, slice the chicken.
  5. To assemble the stack, begin with a layer of rice, then add the sliced chicken and avocado.
  6. Repeat the layers until all ingredients are used.
  7. Season with salt and pepper and garnish with cilantro and lime wedges if desired.

Notes

For more flavor, marinate the chicken longer. Use brown rice for a healthier option.
