Description
A delicious dish featuring sweet acorn squash glazed with honey and topped with creamy goat cheese and tart cranberry drizzle.
Ingredients

- 2 small acorn squashes (about 1 lb / 450 g each), halved and seeds removed
- 2 tablespoons (30 ml) olive oil
- 2–3 tablespoons (30–45 ml) honey
- Salt, to taste
- Freshly ground black pepper, to taste
- Creamy goat cheese, for topping
- Cranberry drizzle, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Brush the inside of the acorn squash halves with olive oil and season with salt and pepper.
- Place the squashes cut side down on a baking sheet and roast for about 25-30 minutes, or until tender.
- In a small bowl, mix honey with a little water to thin if needed.
- Remove the squashes from the oven, turn them cut side up, and drizzle with honey.
- Return to the oven and roast for an additional 10 minutes.
- Once done, remove from the oven and let cool slightly.
- Top with creamy goat cheese and drizzle with cranberry sauce before serving.
Notes
Adjust honey and cranberry drizzle based on your sweetness preference. For added flavor, sprinkle some chopped nuts or herbs on top before serving.
