Ingredients

  • 1 chicken breast, cubed
  • 2 tbsp olive oil, divided
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp cornstarch (optional for thickness)
  • 1 cup green beans, trimmed
  • 1 cup mushrooms, sliced
  • Salt & pepper to taste
  • Sesame seeds (optional)
  • Chili flakes (optional)

Instructions

  1. In a skillet, sauté chicken in 1 tablespoon of olive oil until golden.
  2. Add soy sauce, honey, garlic, and cornstarch (if using). Stir until glazed.
  3. Heat the remaining olive oil in a pan, toss in green beans with salt and pepper, and cook until crisp-tender.
  4. Sauté mushrooms in the remaining olive oil until browned and juicy.
  5. Layer chicken, mushrooms, and green beans in a bowl.
  6. Optionally, sprinkle with sesame seeds or chili flakes before serving.

Notes

Feel free to adjust the garlic and honey to suit your taste. For added crunch, add chopped nuts or seeds. Other veggies like bell peppers or broccoli can be used.
