Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 cups cooked brown rice
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. In a small bowl, mix honey, minced garlic, soy sauce, salt, and pepper.
  2. Marinate the chicken breasts in the honey garlic mixture for at least 30 minutes.
  3. Heat sesame oil in a pan over medium heat.
  4. Remove the chicken from the marinade and cook in the pan until golden brown and cooked through, about 6-7 minutes per side.
  5. In the same pan, add broccoli and bell peppers, cooking until tender.
  6. Serve the chicken over brown rice topped with the sautéed vegetables.
  7. Drizzle with any remaining marinade, sprinkle with sesame seeds and green onions, and enjoy!
