Ingredients

  • 2 chicken breasts
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. In a bowl, mix honey, soy sauce, and minced garlic. Set aside.
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in a pan over medium heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes per side.
  4. Remove the chicken from the pan and let it rest.
  5. In the same pan, add broccoli, bell peppers, and snap peas. Sauté for about 5 minutes until vegetables are tender-crisp.
  6. Slice the chicken and return it to the pan. Pour the honey garlic mixture on top and stir until everything is well combined and heated through.
  7. Serve over cooked rice or quinoa.

Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F (75°C). You can customize the vegetables based on your preferences.
