Homemade Vanilla Ice Cream

Description

A classic, rich, and creamy vanilla ice cream that you can easily make at home for a refreshing treat.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • Pinch of salt
  • 5 large egg yolks

Instructions

  1. In a medium saucepan, heat the heavy cream and whole milk over medium heat until it begins to steam, but not boil.
  2. In a separate bowl, whisk together the egg yolks, sugar, and salt until smooth and pale.
  3. Slowly pour about half of the hot milk mixture into the egg yolks, whisking constantly to temper the eggs.
  4. Gradually pour the egg mixture back into the saucepan with the remaining milk mixture while continuing to whisk.
  5. Place the saucepan over low heat and cook, stirring constantly until the custard thickens enough to coat the back of the spoon (5-8 minutes).
  6. Once thickened, remove from heat and stir in the vanilla extract. Pour into a clean bowl, cover, and refrigerate for at least 2 hours, or until completely chilled.
  7. Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions (20-30 minutes).
  8. Transfer the ice cream to an airtight container and freeze for at least 4 hours, or overnight, to allow it to firm up.
  9. Scoop out and enjoy your creamy homemade vanilla ice cream!
