Description
A classic, rich, and creamy vanilla ice cream that you can easily make at home for a refreshing treat.
Ingredients
Scale
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract
- Pinch of salt
- 5 large egg yolks
Instructions
- In a medium saucepan, heat the heavy cream and whole milk over medium heat until it begins to steam, but not boil.
- In a separate bowl, whisk together the egg yolks, sugar, and salt until smooth and pale.
- Slowly pour about half of the hot milk mixture into the egg yolks, whisking constantly to temper the eggs.
- Gradually pour the egg mixture back into the saucepan with the remaining milk mixture while continuing to whisk.
- Place the saucepan over low heat and cook, stirring constantly until the custard thickens enough to coat the back of the spoon (5-8 minutes).
- Once thickened, remove from heat and stir in the vanilla extract. Pour into a clean bowl, cover, and refrigerate for at least 2 hours, or until completely chilled.
- Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions (20-30 minutes).
- Transfer the ice cream to an airtight container and freeze for at least 4 hours, or overnight, to allow it to firm up.
- Scoop out and enjoy your creamy homemade vanilla ice cream!
Notes
