Ingredients

  • Fresh tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil, to taste
  • 1/2 cup cream (optional)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until soft.
  3. Add chopped tomatoes and broth; season with salt and pepper.
  4. Simmer for 20-30 minutes.
  5. Blend the mixture until smooth.
  6. Stir in basil and cream if desired.
  7. Serve hot with bread.

Notes

Use ripe, fresh tomatoes for the best flavor. Add more cream for a creamier soup.
