Description
This creamy homemade strawberry vanilla bean ice cream combines the freshness of ripe strawberries with the rich flavor of vanilla, perfect for hot days or as a delightful dessert.
Ingredients
Scale
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 vanilla bean pod (split and scraped)
- 1 1/2 cups fresh strawberries (chopped)
- 2 tablespoons sugar (for strawberries)
Instructions
- In a bowl, toss the chopped strawberries with 2 tablespoons of sugar and let them sit for about 10 minutes. Mash the strawberries to your desired consistency and set aside.
- In a large mixing bowl, whisk together the heavy cream, whole milk, and granulated sugar until the sugar dissolves. Add vanilla bean seeds and pod to the cream mixture along with the vanilla extract.
- Gently fold the mashed strawberries into the cream mixture, stirring gently to combine.
- Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions (usually about 20-30 minutes).
- Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or overnight for a firmer consistency.
- Scoop the ice cream into bowls or cones and optionally garnish with fresh strawberries or a swirl of strawberry sauce.
Notes
Use ripe strawberries for best flavor and high-quality vanilla beans for a richer taste. If you don’t have an ice cream maker, pour the mixture into a shallow container and stir every 30 minutes until the desired consistency is reached.
