Homemade Strawberry Vanilla Bean Ice Cream

A delicious homemade ice cream combining fresh strawberries and rich vanilla bean for a refreshing treat.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 vanilla bean (or 2 tsp pure vanilla extract)
  • 2 cups fresh strawberries (hulled and mashed)
  • 1 tbsp lemon juice

Instructions

  1. Mash the strawberries with sugar and lemon juice. Let sit for 15-20 minutes to release the juices.
  2. In a saucepan, heat the heavy cream, milk, and the vanilla bean (split and scraped) over medium heat until warm. Be careful not to let it boil. Remove from heat and let the vanilla infuse its flavor.
  3. Remove the vanilla bean pod, then mix in the strawberry mixture. Refrigerate for at least 2 hours or overnight until chilled.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it is thick and creamy.
  5. Transfer the ice cream to a container and freeze for 4-6 hours until firm. Scoop and enjoy!

Notes

For best flavor, use ripe strawberries. If you don’t have an ice cream maker, stir the mixture in a container every 30 minutes until it reaches the desired consistency.
