A delightful summer treat made with fresh strawberries and rich vanilla, perfect for warm days.


Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar (for strawberry mixture)
  • 1 tsp lemon juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar (for ice cream base)
  • 1 vanilla bean (or 2 tsp vanilla bean paste)
  • 4 large egg yolks

Instructions

  1. Prepare the Strawberry Mixture: In a medium saucepan, combine the chopped strawberries, 1/2 cup of sugar, and lemon juice. Cook over medium heat for about 5-7 minutes until the strawberries are softened. Blend the mixture until smooth, and strain if desired. Chill the mixture in the fridge.
  2. Make the Vanilla Bean Ice Cream Base: In a saucepan, heat the heavy cream, whole milk, and the remaining 3/4 cup of sugar with the vanilla bean (or vanilla bean paste). In another bowl, whisk the egg yolks with the remaining sugar. Slowly mix in the warm cream to the egg yolk mixture. Return it to the saucepan and cook until thickened. Strain the mixture and chill for at least 240 minutes.
  3. Combine and Churn: Once chilled, mix the strawberry puree with the vanilla custard. Pour this mixture into an ice cream maker and churn according to the manufacturer’s instructions until it becomes creamy.
  4. Freeze and Serve: Transfer the ice cream to an airtight container and freeze for at least 240 minutes. Once ready, scoop and enjoy!

Notes

Use fresh strawberries for the best flavor. Chill the mixture thoroughly for a smoother texture.
