A delightful homemade ice cream that combines fresh strawberries with rich vanilla flavor, perfect for summer days.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 vanilla bean pod (scraped)
  • 1 1/2 cups fresh strawberries (chopped)
  • 2 tbsp sugar (for strawberries)

Instructions

  1. In a bowl, mix chopped strawberries with 2 tbsp of sugar and let sit for about 10 minutes. Mash to preferred consistency.
  2. In a large mixing bowl, whisk together heavy cream, whole milk, and granulated sugar. Add vanilla extract and scraped vanilla bean seeds, stirring until sugar dissolves.
  3. Gently fold in the mashed strawberries into the cream mixture.
  4. Pour the mixture into your ice cream maker and churn for 20-30 minutes until soft-serve consistency.
  5. Transfer the ice cream to an airtight container and freeze for at least 4 hours or overnight for a firmer texture.
  6. Scoop and serve in bowls or cones, garnished with fresh strawberries or strawberry sauce.

Notes

Use fresh, ripe strawberries for the best flavor. Can substitute strawberries for other fruits or add mix-ins like chocolate chips.
