Description

A delightful dessert capturing the essence of summer with layers of moist strawberry-flavored cake and creamy frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, pureed
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1/2 cup butter, softened (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and strawberry puree.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with milk, until well combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack.
  7. For the frosting, beat the cream cheese and softened butter until smooth. Gradually add the powdered sugar and vanilla extract until fluffy.
  8. Once the cakes are completely cooled, spread frosting between layers and on top of the cake. Garnish with fresh strawberries. Enjoy!

Notes

Use fresh, ripe strawberries for the best flavor. Make sure all ingredients are at room temperature for better mixing.
