A delightful homemade raspberry ripple ice cream that combines creamy texture with a tangy swirl of raspberry puree, perfect for special occasions.

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup raspberry puree
- 2 tablespoons raspberry jam
- 1/2 cup white chocolate shavings
Instructions
- In a large bowl, whisk together the heavy cream, whole milk, and granulated sugar until the sugar dissolves completely. Add the vanilla extract and mix well.
- In a small saucepan, combine the raspberry puree and raspberry jam. Heat over medium heat, stirring occasionally, until the mixture thickens slightly (about 5 minutes). Remove from heat and let it cool to room temperature.
- Pour the ice cream base into your ice cream maker and churn according to the manufacturer’s instructions. Once the ice cream reaches soft-serve consistency, stop the machine.
- Transfer the ice cream to a container, layering it with the raspberry ripple mixture and gently swirling with a spoon to create a ‘ripple’ effect. Sprinkle white chocolate shavings throughout the ice cream and swirl them in lightly.
- Cover the container and freeze the ice cream for at least 4 hours or until firm. Once set, scoop and enjoy your romantic, creamy treat!
Notes
To prevent ice crystals from forming, press parchment paper against the surface of the ice cream before sealing the container.
