Delightful mini tarts with a buttery crust and sweet pineapple filling, perfect for any occasion.
Ingredients
Scale
- 400 g wheat flour
- 200 g cold butter, cubed
- 100 g sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 pinch of salt
- 2–4 tbsp cold water (if needed)
- Pineapple filling (quantity as desired)
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix together the flour, sugar, and salt.
- Add the cubed cold butter and mix until crumbly.
- Incorporate the egg, egg yolk, and vanilla extract.
- Add cold water, if necessary, to form a dough.
- Roll out the dough and cut it into small circles.
- Place each circle in a tartlet tin.
- Fill each with the pineapple filling.
- Bake for about 20–25 minutes or until golden brown.
- Allow to cool before serving.
Notes
Serve warm or at room temperature; dust with powdered sugar or drizzle with honey for extra sweetness. Can be stored for up to three days at room temperature or a week in the refrigerator.
