Ingredients

  • 1/2 cup sweetened condensed milk
  • 1 teaspoon peppermint extract
  • 2 cups dark or semi-sweet chocolate chips
  • 2 tablespoons coconut oil or shortening

Instructions

  1. In a large mixing bowl, combine the powdered sugar, sweetened condensed milk, and peppermint extract. Mix until a smooth, firm dough forms.
  2. Roll the peppermint dough into small balls (about 1 inch in diameter) and flatten them into discs. Place them on a parchment-lined baking sheet.
  3. Freeze the peppermint discs for 20-30 minutes, or until firm.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  5. Using a fork, dip each peppermint disc into the melted chocolate, ensuring it’s fully coated. Let excess chocolate drip off before placing the coated patty back on the baking sheet.
  6. Allow the chocolate-covered patties to set at room temperature, or refrigerate for 15-20 minutes until the chocolate hardens.
