Description

A delightful homemade ice cream featuring vanilla, creamy peanut butter, and rich chocolate fudge. Perfect for summer days and family gatherings.


Ingredients

  • 2 cups (480ml) heavy cream
  • 1 cup (240ml) whole milk
  • 3/4 cup (150g) granulated sugar
  • 1 tsp vanilla extract
  • 4 large egg yolks
  • 1/2 cup (120g) creamy peanut butter
  • 1/4 cup (60ml) heavy cream
  • 1 tbsp powdered sugar (optional)
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/4 cup (60ml) heavy cream
  • 1 tbsp butter
  • 1/2 cup (80g) mini peanut butter cups, chopped

Instructions

  1. Make the Vanilla Ice Cream Base: In a medium saucepan, combine the heavy cream, milk, and sugar over medium heat until the sugar dissolves. In a separate bowl, whisk the egg yolks, then temper with the hot cream mixture. Pour back into the saucepan and cook until thickened. Remove from heat, stir in vanilla, then cool and refrigerate.
  2. Prepare the Peanut Butter Swirl: Heat peanut butter and cream over low heat until smooth. Optionally add powdered sugar. Cool to room temperature.
  3. Make the Chocolate Fudge: Combine chocolate chips, cream, and butter in a bowl, and microwave until smooth. Cool slightly.
  4. Churn the Ice Cream: Pour the chilled vanilla base into an ice cream maker and churn until soft-serve consistency, adding chopped peanut butter cups in the last minutes.
  5. Assemble: Transfer churned ice cream to a container, swirl in peanut butter and chocolate fudge, and freeze until firm (at least 4 hours).
  6. Serve and Enjoy: Scoop and serve in bowls or cones.

Notes

For a thinner peanut butter swirl, add more cream. Store leftover ice cream in an airtight container in the freezer for up to two weeks.
