Description

A delicious homemade ice cream combining rich chocolate, smooth peanut butter, and crunchy peanut butter cups, perfect for summer or as a dessert after dinner.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup creamy or chunky peanut butter
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter
  • 2 tbsp heavy cream
  • 1/2 cup mini peanut butter cups (chopped)

Instructions

  1. In a large mixing bowl, combine heavy cream, whole milk, sugar, and vanilla extract. Whisk until smooth.
  2. If using an ice cream maker, pour the mixture into the machine. If not, continue to step 3.
  3. In a microwave-safe bowl, combine semi-sweet chocolate chips, peanut butter, and heavy cream. Microwave in 30-second intervals until melted and smooth.
  4. Churn the ice cream mixture in an ice cream maker or freeze it in a shallow container for about 2 hours, stirring every 30 minutes.
  5. Fold in the chocolate-peanut butter swirl and chopped mini peanut butter cups.
  6. Transfer to an airtight container and freeze for an additional 4 hours or until firm.
  7. Scoop out and enjoy your Moose Tracks ice cream!

Notes

Store the ice cream in an airtight container for 2-3 weeks. Let it soften slightly before scooping if frozen hard.
