Description

A delicious creamy ice cream loaded with rich chocolate flavors, peanut butter fudge swirls, and mini peanut butter cups.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3/4 cup semi-sweet chocolate chips (melted)
  • 1/2 cup creamy peanut butter
  • 1/4 cup heavy cream (for peanut butter fudge swirl)
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for peanut butter fudge swirl)
  • 1/2 cup semi-sweet chocolate chips (for fudge swirl)
  • 1/4 cup heavy cream (for fudge swirl)
  • 1 tbsp butter
  • 1/2 cup mini peanut butter cups (chopped)

Instructions

  1. Make the Chocolate Ice Cream Base: In a medium saucepan, whisk together the heavy cream, whole milk, sugar, cocoa powder, and a pinch of salt. Heat over medium heat, stirring constantly, until heated through and sugar is dissolved. Remove from heat and stir in the melted chocolate and vanilla extract. Let cool to room temperature, then refrigerate for at least 2 hours or overnight.
  2. Make the Peanut Butter Fudge Swirl: Melt the peanut butter and heavy cream together over low heat in a small saucepan. Stir in the powdered sugar and vanilla extract. Remove from heat and let cool. Chill in the fridge to firm up slightly.
  3. Make the Chocolate Fudge Swirl: Heat the chocolate chips, heavy cream, and butter over low heat in a separate saucepan. Stir until smooth and thickened. Set aside to cool.
  4. Churn the Ice Cream: Pour the chilled chocolate ice cream base into an ice cream maker and churn according to manufacturer’s instructions. When nearly done, drizzle in the peanut butter fudge and chocolate fudge swirls, along with chopped peanut butter cups. Let finish churning until swirls are incorporated.
  5. Freeze the Ice Cream: Transfer churned ice cream to an airtight container, swirling in fudge. Cover and freeze for at least 4 hours or until firm.
  6. Serve and Enjoy: Scoop and serve once set, and consider adding extra swirls of fudge on top!

Notes

Store in an airtight container in the freezer for up to 2 weeks. Ensure all ingredients are at room temperature before mixing.
