Description

Delicious homemade Moose Tracks ice cream loaded with creamy vanilla, rich fudge swirl, and peanut butter cups.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • Pinch of salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream (for fudge swirl)
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract (for fudge swirl)
  • 1/2 cup mini peanut butter cups (chopped or halved)

Instructions

  1. Make the fudge swirl by heating heavy cream, butter, and vanilla in a saucepan until melted. Stir in chocolate chips until smooth, then cool.
  2. Prepare the ice cream base by whisking together heavy cream, whole milk, sugar, vanilla, and salt in a bowl until sugar is dissolved. Churn in an ice cream maker according to instructions (20-30 minutes).
  3. Once the ice cream base is ready, fold in the cooled fudge swirl and chopped peanut butter cups.
  4. Transfer to an airtight container and freeze for at least 4 hours or overnight.
  5. Serve and enjoy in bowls or cones with optional extra fudge or crushed peanut butter cups on top.

Notes

Let the fudge swirl cool to room temperature before mixing. For a no-ice cream maker version, freeze mixture in a shallow dish, stirring every 30 minutes until firm.
