Description
Delicious homemade Moose Tracks ice cream loaded with creamy vanilla, rich fudge swirl, and peanut butter cups.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon vanilla extract
- Pinch of salt
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream (for fudge swirl)
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract (for fudge swirl)
- 1/2 cup mini peanut butter cups (chopped or halved)
Instructions
- Make the fudge swirl by heating heavy cream, butter, and vanilla in a saucepan until melted. Stir in chocolate chips until smooth, then cool.
- Prepare the ice cream base by whisking together heavy cream, whole milk, sugar, vanilla, and salt in a bowl until sugar is dissolved. Churn in an ice cream maker according to instructions (20-30 minutes).
- Once the ice cream base is ready, fold in the cooled fudge swirl and chopped peanut butter cups.
- Transfer to an airtight container and freeze for at least 4 hours or overnight.
- Serve and enjoy in bowls or cones with optional extra fudge or crushed peanut butter cups on top.
Notes
Let the fudge swirl cool to room temperature before mixing. For a no-ice cream maker version, freeze mixture in a shallow dish, stirring every 30 minutes until firm.
