A classic homemade meatloaf recipe paired with creamy mashed potatoes and fresh sautéed vegetables.

- 2 lbs ground beef
- 1 cup breadcrumbs
- 2 eggs
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp pepper
- 4 large potatoes, peeled and chopped
- 1/2 cup butter
- 1/4 cup milk
- 1 cup fresh corn
- 1 cup green beans
- 4 strips bacon, for seasoning
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, eggs, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in a baking dish.
- Bake for about 60 minutes or until the meatloaf is cooked through.
- Meanwhile, peel and chop potatoes, boil them until tender. Drain, then mash with butter and milk, seasoning to taste.
- In a skillet, cook the bacon until crispy, then add the fresh corn and green beans. Sauté until the vegetables are tender.
- Serve the meatloaf with mashed potatoes and the sautéed vegetables.
Notes
For extra flavor, consider adding herbs or spices to the meat mixture. You can also glaze the meatloaf with ketchup or barbecue sauce in the last 10 minutes of baking.
