- 1 pie crust (store-bought or homemade)
- 2 cups pumpkin puree
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh thyme or rosemary for garnish (optional)
- Egg wash (1 egg beaten with a little water) for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes. Stir in brown sugar, salt, and pepper.
- Roll out the pie crust on a floured surface and transfer it to a baking sheet lined with parchment paper.
- Spread the pumpkin puree over the crust, leaving a 2-inch border.
- Top the pumpkin with the caramelized onions.
- Fold the edges of the crust over the filling, pleating as you go.
- Brush the crust with the egg wash.
- Bake for 30-35 minutes or until the crust is golden brown.
- Garnish with fresh herbs if desired and serve warm.
Notes
Make caramelized onions ahead of time for quicker assembly. Optionally, add cheese like feta or goat cheese for extra flavor.
