A delicious and comforting homemade galette featuring sweet pumpkin puree and rich caramelized onions, all wrapped in a flaky crust.


Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 cups pumpkin puree
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)
  • Egg wash (1 egg beaten with a little water) for brushing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes. Stir in brown sugar, salt, and pepper.
  3. Roll out the pie crust on a floured surface and transfer it to a baking sheet lined with parchment paper.
  4. Spread the pumpkin puree over the crust, leaving a 2-inch border.
  5. Top the pumpkin with the caramelized onions.
  6. Fold the edges of the crust over the filling, pleating as you go.
  7. Brush the crust with the egg wash.
  8. Bake for 30-35 minutes or until the crust is golden brown.
  9. Garnish with fresh herbs if desired and serve warm.

Notes

Make caramelized onions ahead of time for quicker assembly. Optionally, add cheese like feta or goat cheese for extra flavor.
