A fun and colorful homemade ice cream combining the exotic flavor of dragonfruit with sweet strawberries, perfect for summer.
Ingredients
Scale
- 2 cups heavy whipping cream
- 1 cup whole milk (or coconut milk for dairy-free option)
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1–2 ripe dragonfruit (pureed)
- 1 cup fresh strawberries (pureed or chopped)
Instructions
- In a bowl, whisk together the heavy whipping cream, whole milk, granulated sugar, and vanilla extract until the sugar is dissolved.
- Add the pureed dragonfruit and strawberries into the mixture and stir until well combined.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to a lidded container and freeze for at least 240 minutes or until firm.
- Serve and enjoy!
Notes
Use ripe dragonfruit for a sweeter flavor and better color. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until desired consistency.
