Ingredients

  • 1 cup whole milk (or coconut milk for dairy-free option)
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 12 ripe dragonfruit (pureed)
  • 1 cup fresh strawberries (pureed or chopped)

Instructions

  1. In a bowl, whisk together the heavy whipping cream, whole milk, granulated sugar, and vanilla extract until the sugar is dissolved.
  2. Add the pureed dragonfruit and strawberries into the mixture and stir until well combined.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  4. Transfer the ice cream to a lidded container and freeze for at least 240 minutes or until firm.

Notes

Use ripe dragonfruit for a sweeter flavor and better color. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until desired consistency.
