A refreshing and colorful ice cream that combines the unique flavor of dragonfruit with sweet strawberries, perfect for any occasion.


Ingredients

  • 1 cup fresh or frozen dragonfruit, diced
  • 1 cup fresh or frozen strawberries, hulled
  • 2 cups heavy whipping cream
  • 1 cup whole milk (or coconut milk for dairy-free option)
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

  1. If using fresh dragonfruit, peel and dice it. For frozen fruit, thaw for a few minutes. Hull strawberries and cut into quarters. Blend dragonfruit, strawberries, and lemon juice until smooth.
  2. In a mixing bowl, combine heavy cream, whole milk, sugar, and vanilla. Whisk until sugar is dissolved.
  3. Stir the fruit mixture into the cream mixture until well combined.
  4. Pour into an airtight container and refrigerate for at least 2 hours.
  5. Pour into an ice cream maker and churn for about 20-25 minutes until thickened.
  6. Transfer to a container and freeze for 3-4 hours. Serve with fresh fruit if desired.

Notes

Use ripe and fresh fruit for the best flavor. Can be made dairy-free with coconut milk.
