Ingredients
Scale
- 1¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1½ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 2 cups granulated sugar
- 2 large eggs, at room temperature
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 cup hot coffee or hot water
- 1 cup white chocolate chips
- 1½ cups heavy whipping cream, divided
- ¼ cup granulated sugar (for white chocolate mousse)
- 1 cup dark chocolate chips
- ¼ cup granulated sugar (for dark chocolate mousse)
- 1 cup dark chocolate chips (for ganache)
- ½ cup heavy cream (for ganache)
- Optional: Chocolate shavings, curls, or sprinkles
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Stir in the granulated sugar.
- In another bowl, whisk the eggs, vegetable oil, vanilla extract, and buttermilk. Gradually add the hot coffee until smooth.
- Divide the batter between the pans and bake for 30–35 minutes. Cool on a wire rack.
- For the white chocolate mousse: Melt the white chocolate chips with ½ cup of heavy cream. Allow it to cool slightly. Whip the remaining heavy cream with sugar until soft peaks form, then fold it into the white chocolate mixture until smooth.
- For the dark chocolate mousse: Melt the dark chocolate chips with ½ cup of heavy cream. Cool it down and whip the remaining heavy cream with sugar until soft peaks form, then fold it into the dark chocolate until fully incorporated.
- Assemble the cake: Place one chocolate layer on a serving plate, spread white chocolate mousse over it, and top with the second layer. Cover it with dark chocolate mousse.
- For the ganache: Heat the heavy cream until simmering, pour it over the dark chocolate chips, and stir until smooth. Drizzle the ganache over the assembled cake.
- Refrigerate for at least 2 hours to set. Before serving, garnish with chocolate shavings or sprinkles.
