A delightful treat combining layers of moist chocolate cake with creamy white and dark chocolate mousse, topped with chocolate ganache.

  • 1 cup buttermilk
  • 1 cup hot coffee or hot water
  • 1 cup white chocolate chips
  • 1½ cups heavy whipping cream, divided
  • ¼ cup granulated sugar (for white chocolate mousse)
  • 1 cup dark chocolate chips
  • ¼ cup granulated sugar (for dark chocolate mousse)
  • 1 cup dark chocolate chips (for ganache)
  • ½ cup heavy cream (for ganache)
  • Optional: Chocolate shavings, curls, or sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Stir in the granulated sugar.
  3. In another bowl, whisk the eggs, vegetable oil, vanilla extract, and buttermilk. Gradually add the hot coffee until smooth.
  4. Divide the batter between the pans and bake for 30–35 minutes. Cool on a wire rack.
  5. For the white chocolate mousse: Melt the white chocolate chips with ½ cup of heavy cream. Allow it to cool slightly. Whip the remaining heavy cream with sugar until soft peaks form, then fold it into the white chocolate mixture until smooth.
  6. For the dark chocolate mousse: Melt the dark chocolate chips with ½ cup of heavy cream. Cool it down and whip the remaining heavy cream with sugar until soft peaks form, then fold it into the dark chocolate until fully incorporated.
  7. Assemble the cake: Place one chocolate layer on a serving plate, spread white chocolate mousse over it, and top with the second layer. Cover it with dark chocolate mousse.
  8. For the ganache: Heat the heavy cream until simmering, pour it over the dark chocolate chips, and stir until smooth. Drizzle the ganache over the assembled cake.
  9. Refrigerate for at least 2 hours to set. Before serving, garnish with chocolate shavings or sprinkles.

Notes

Ensure eggs are at room temperature for better mixing. Use high-quality chocolate for the best flavor.
