Ingredients

- 2 cups corned beef, shredded
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pie crust (store-bought or homemade)
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, sauté the onion and garlic until softened.
- Add the shredded corned beef and mixed vegetables, then pour in the beef broth and Worcestershire sauce. Cook until heated through. Season with salt and pepper.
- Roll out the pie crust and place it in a pie dish. Fill with the corned beef mixture.
- Cover with another pie crust, crimping the edges to seal.
- Brush the top with the beaten egg.
- Cut slits in the top for venting.
- Bake for 30-35 minutes until golden brown.
Notes
For extra flavor, consider adding herbs such as thyme or rosemary to the filling.
