Ingredients

  • 2 cups corned beef, shredded
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pie crust (store-bought or homemade)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the onion and garlic until softened.
  3. Add the shredded corned beef and mixed vegetables, then pour in the beef broth and Worcestershire sauce. Cook until heated through. Season with salt and pepper.
  4. Roll out the pie crust and place it in a pie dish. Fill with the corned beef mixture.
  5. Cover with another pie crust, crimping the edges to seal.
  6. Brush the top with the beaten egg.
  7. Cut slits in the top for venting.
  8. Bake for 30-35 minutes until golden brown.

Notes

For extra flavor, consider adding herbs such as thyme or rosemary to the filling.
