Homemade Chocolate Peanut Butter Cups

Description

Delicious and easy treat with a smooth chocolate shell and creamy peanut butter filling.


Ingredients

  • 1 1/2 cups semisweet or dark chocolate chips
  • 1 tablespoon coconut oil (optional)
  • 1/2 cup creamy peanut butter
  • 2 tablespoons powdered sugar
  • 1 tablespoon unsalted butter, softened
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a mini muffin tin with paper liners.
  2. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each, until melted and smooth.
  3. In a small bowl, mix the peanut butter, powdered sugar, butter, vanilla extract, and salt until smooth.
  4. Spoon a small amount of melted chocolate (about 1 teaspoon) into each muffin liner and freeze for 5–10 minutes to set.
  5. Scoop about 1/2–1 teaspoon of the peanut butter mixture, roll it into a ball or flatten it, and place it on top of the hardened chocolate.
  6. Spoon more melted chocolate over the peanut butter layer and tap the tin to smooth the tops.
  7. Refrigerate for 20–30 minutes until fully set.
  8. Remove paper liners and enjoy! Store leftovers in an airtight container in the fridge for up to 2 weeks.

Notes

Use good quality chocolate for the best flavor. Adjust sweetness to taste by using less powdered sugar.
