Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 cup unsweetened cocoa powder
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4 oz semi-sweet or dark chocolate, chopped (optional)

Instructions

  1. In a medium saucepan, whisk together cocoa powder, sugar, and salt. Add the whole milk and heat until it simmers.
  2. In a bowl, whisk the egg yolks. Temper the yolks by gradually adding the hot mixture while whisking continuously.
  3. Return the entire mixture to the saucepan and cook until it thickens.
  4. If using, stir in the chopped chocolate off the heat until it fully melts.
  5. Strain the mixture through a fine sieve, let it cool, then stir in the heavy cream and vanilla extract.
  6. Chill the mixture in the refrigerator for 180-240 minutes or overnight for the best flavor.
  7. Churn the chilled mixture in an ice cream maker following the manufacturer’s instructions for 20-25 minutes.
  8. Freeze the ice cream for at least 240 minutes before serving to set.
