- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 cup unsweetened cocoa powder
- 4 large egg yolks
- 1 tsp vanilla extract
- Pinch of salt
- 4 oz semi-sweet or dark chocolate, chopped (optional)
Instructions
- In a medium saucepan, whisk together cocoa powder, sugar, and salt. Add the whole milk and heat until it simmers.
- In a bowl, whisk the egg yolks. Temper the yolks by gradually adding the hot mixture while whisking continuously.
- Return the entire mixture to the saucepan and cook until it thickens.
- If using, stir in the chopped chocolate off the heat until it fully melts.
- Strain the mixture through a fine sieve, let it cool, then stir in the heavy cream and vanilla extract.
- Chill the mixture in the refrigerator for 180-240 minutes or overnight for the best flavor.
- Churn the chilled mixture in an ice cream maker following the manufacturer’s instructions for 20-25 minutes.
- Freeze the ice cream for at least 240 minutes before serving to set.
