Description

A rich, moist chocolate cake that’s perfect for birthdays and celebrations.


Ingredients

  • 1 3/4 cups (220g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 1 cup (230g) unsalted butter, softened
  • 3 1/2 cups (440g) powdered sugar
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch (23cm) round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until the batter is smooth.
  4. Reduce the mixer speed to low and carefully add the boiling water. Mix until well combined.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. For the frosting, beat the softened butter until creamy. Sift together powdered sugar and cocoa powder, then gradually add to the butter, mixing well after each addition.
  9. Stir in vanilla extract and gradually add heavy cream until the desired consistency is reached.
  10. Assemble the cake by placing one cake layer on a serving plate and spreading frosting on top. Add the second layer and frost the top and sides of the cake.
  11. Garnish with chocolate shavings, sprinkles, or fresh berries if desired. Slice and serve.

Notes

Store in an airtight container at room temperature for up to three days. Refrigerate for up to a week or freeze for up to three months.
