Ingredients

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until the batter is smooth.
  4. Reduce the mixer speed to low and carefully add the boiling water. The batter will be thin.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the softened butter until creamy. Sift together the powdered sugar and cocoa powder, then gradually add them to the butter.
  9. Stir in the vanilla extract and gradually add the heavy cream until the desired consistency is reached.
  10. To assemble, place one cake layer on a serving plate, spread a layer of frosting on top, add the second cake layer, and frost the top and sides.
  11. Garnish with chocolate shavings, sprinkles, or fresh berries if desired. Serve and enjoy!

Notes

Make sure your ingredients are at room temperature for a smoother batter. Don’t skip the boiling water; it helps to create a moist cake. Allow the cake to cool completely before frosting to prevent melting the icing.
