- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda

- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/4 cup heavy cream or milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until the batter is smooth.
- Reduce the mixer speed to low and carefully add the boiling water. The batter will be thin.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy. Sift together the powdered sugar and cocoa powder, then gradually add them to the butter.
- Stir in the vanilla extract and gradually add the heavy cream until the desired consistency is reached.
- To assemble, place one cake layer on a serving plate, spread a layer of frosting on top, add the second cake layer, and frost the top and sides.
- Garnish with chocolate shavings, sprinkles, or fresh berries if desired. Serve and enjoy!

Make sure your ingredients are at room temperature for a smoother batter. Don’t skip the boiling water; it helps to create a moist cake. Allow the cake to cool completely before frosting to prevent melting the icing.
