- 1 cup raw pistachios (unsalted, shelled)
- 1 cup Greek yogurt (plain, high-protein variety)
- 1 scoop vanilla protein powder (whey or plant-based)
- 1 cup unsweetened almond milk (or any milk of choice)
- 2 tbsp honey (or maple syrup for vegan version)
Instructions
- In a blender or food processor, combine the raw pistachios, Greek yogurt, protein powder, almond milk, and honey.
- Blend until smooth and creamy.
- Taste and adjust sweetness if needed.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Once churned, transfer the ice cream to a container and freeze for at least 120 minutes or until firm.
- Serve and enjoy your healthy pistachio ice cream!
