Description

A delicious and filling enchilada bowl packed with high protein from cottage cheese and your choice of chicken or beef.


Ingredients

  • 4 corn tortillas
  • 1 cup cooked shredded chicken or lean ground beef
  • 1 cup red enchilada sauce
  • 1/2 cup low-fat cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 avocado, sliced
  • Fresh chopped cilantro (for garnish)
  • Salt & pepper, to taste
  • Optional: diced onions, black beans, or sautéed peppers

Instructions

  1. Warm the tortillas lightly in a microwave or by toasting them.
  2. In an oven-safe bowl, layer tortilla pieces, enchilada sauce, meat, and cheddar cheese, repeating until filled.
  3. Bake at 375°F (190°C) for 10–12 minutes until heated through.
  4. Top with cottage cheese, avocado slices, and cilantro before serving.
  5. Enjoy your protein-packed meal!

Notes

Customize with your favorite vegetables or make it vegetarian by omitting meat. Can be frozen before baking for later.
