Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes.
  4. Stir in the boiling water (the batter will be thin) and mix until well combined.
  5. Pour the batter into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool for 10 minutes in the pans, then remove to wire racks to cool completely.
  6. For the cream cheese filling, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, mixing until combined.
  7. Once the cakes are cool, place one layer on a serving platter, spread the cream cheese filling on top, and then place the second layer on top.
  8. Optionally, frost the top with chocolate frosting or serve as is.

Notes

Store any leftover cake in an airtight container in the refrigerator for up to 3-4 days. For long-term storage, freeze the cake layers separately for up to 3 months.
