- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add the eggs, milk, oil, and vanilla to the dry ingredients and beat on medium speed for 2 minutes.
- Stir in the boiling water (the batter will be thin) and mix until well combined.
- Pour the batter into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool for 10 minutes in the pans, then remove to wire racks to cool completely.
- For the cream cheese filling, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla, mixing until combined.
- Once the cakes are cool, place one layer on a serving platter, spread the cream cheese filling on top, and then place the second layer on top.
- Optionally, frost the top with chocolate frosting or serve as is.
Notes
Store any leftover cake in an airtight container in the refrigerator for up to 3-4 days. For long-term storage, freeze the cake layers separately for up to 3 months.
