- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped (or 1 tsp dried)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the ricotta cheese, Parmesan, garlic, parsley, and basil until well combined.
- Place the chicken breasts on a flat surface and pound them to an even thickness for even cooking.
- Spread the cheese mixture onto each chicken breast, covering it well.
- Roll the chicken breasts up tightly, starting from one end to the other.
- Secure each roll with toothpicks to hold them together, and then place them in a baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
- Before serving, carefully remove the toothpicks.
Notes
For extra flavor, try adding different herbs or spices to the ricotta mixture. Use fresh herbs for the best taste, but dried herbs can work in a pinch.
