- 2 chicken breasts
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt & pepper to taste
- Grated Parmesan (for garnish)
- Fresh parsley (for garnish)
- 1 cup orzo pasta
- 1 tbsp butter
- 2 tbsp grated Parmesan
- 1/3 cup heavy cream or milk
- 1 zucchini, sliced
- 1 tomato, sliced
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1/4 tsp Italian seasoning
- Olive oil drizzle
Instructions
- Rub the chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper. Sear the chicken in a skillet over medium-high heat for about 6–7 minutes on each side or until golden brown and juicy.
- Meanwhile, boil the orzo pasta until it is al dente. Drain the pasta and stir in the butter, heavy cream or milk, Parmesan, salt, and pepper.
- Preheat your oven to 375°F (190°C). Layer the zucchini and tomato slices in a baking dish. Sprinkle with shredded mozzarella, grated Parmesan, Italian seasoning, and a light drizzle of olive oil. Bake for 15–20 minutes, or until the vegetables are bubbly and golden.
- To serve, add a scoop of creamy orzo to your plate, place the seared chicken on top or beside it, and enjoy a generous portion of the cheesy zucchini bake. Finish with a sprinkle of fresh parsley and additional Parmesan for extra flavor.
Notes
For extra flavor, squeeze lemon juice or sprinkle chili flakes over the chicken before serving.
