Description

A delightful meal that combines tender chicken, creamy orzo, and cheesy zucchini, perfect for family dinners or gatherings.


Ingredients

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt & pepper to taste
  • Grated Parmesan (for garnish)
  • Fresh parsley (for garnish)
  • 1 cup orzo pasta
  • 1 tbsp butter
  • 2 tbsp grated Parmesan
  • 1/3 cup heavy cream or milk
  • 1 zucchini, sliced
  • 1 tomato, sliced
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1/4 tsp Italian seasoning
  • Olive oil drizzle

Instructions

  1. Rub the chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper. Sear the chicken in a skillet over medium-high heat for about 6–7 minutes on each side or until golden brown and juicy.
  2. Meanwhile, boil the orzo pasta until it is al dente. Drain the pasta and stir in the butter, heavy cream or milk, Parmesan, salt, and pepper.
  3. Preheat your oven to 375°F (190°C). Layer the zucchini and tomato slices in a baking dish. Sprinkle with shredded mozzarella, grated Parmesan, Italian seasoning, and a light drizzle of olive oil. Bake for 15–20 minutes, or until the vegetables are bubbly and golden.
  4. To serve, add a scoop of creamy orzo to your plate, place the seared chicken on top or beside it, and enjoy a generous portion of the cheesy zucchini bake. Finish with a sprinkle of fresh parsley and additional Parmesan for extra flavor.

Notes

For extra flavor, squeeze lemon juice or sprinkle chili flakes over the chicken before serving.
