Ingredients

- 1 boneless skinless chicken breast
- 1 medium sweet potato
- 1 zucchini, sliced into thick strips
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt & black pepper to taste
- Optional: squeeze of lemon or sprinkle of chili flakes
Instructions
- Poke the sweet potato a few times with a fork. Roast at 400°F for 45 minutes or until fork-tender.
- Rub the chicken breast with olive oil, Italian seasoning, garlic powder, salt, and pepper. Bake at 400°F for 25-30 minutes until juicy and golden.
- Toss the zucchini sticks with a drizzle of olive oil and season with salt and pepper. Roast at 400°F for 15-20 minutes until browned.
- Slice open the sweet potato, fluff it with a fork, and season lightly with salt. Plate it next to the roasted zucchini and herb chicken.
- Drizzle with olive oil or a squeeze of lemon for extra flavor.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat before serving.
