Ingredients

- 4 zucchini, sliced
- 4 tomatoes, sliced
- 1 liter water
- Salt to taste
- Olive oil
- Fresh basil leaves
- 150g spinach, chopped
Instructions
- In a large pot, bring 1 liter of water to a boil.
- Add the sliced zucchini and cook for about 5 minutes until tender.
- Remove the zucchini and set it aside.
- In the same pot, add the sliced tomatoes and cook for an additional 3-4 minutes.
- Return the zucchini to the pot, season with salt, and add a drizzle of olive oil.
- Stir in fresh basil leaves and chopped spinach, and cook until the spinach is wilted.
- Serve warm as a side dish.
Notes
For extra flavor, consider adding a pinch of garlic or a squeeze of lemon juice. Do not overcook the zucchini; it should be tender but slightly firm.
