Ingredients

  • 4 zucchini, sliced
  • 4 tomatoes, sliced
  • 1 liter water
  • Salt to taste
  • Olive oil
  • Fresh basil leaves
  • 150g spinach, chopped

Instructions

  1. In a large pot, bring 1 liter of water to a boil.
  2. Add the sliced zucchini and cook for about 5 minutes until tender.
  3. Remove the zucchini and set it aside.
  4. In the same pot, add the sliced tomatoes and cook for an additional 3-4 minutes.
  5. Return the zucchini to the pot, season with salt, and add a drizzle of olive oil.
  6. Stir in fresh basil leaves and chopped spinach, and cook until the spinach is wilted.
  7. Serve warm as a side dish.

Notes

For extra flavor, consider adding a pinch of garlic or a squeeze of lemon juice. Do not overcook the zucchini; it should be tender but slightly firm.
