Ingredients

- 1 chicken breast or 3 small chicken thigh pieces
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- Salt & black pepper to taste
- 1 medium sweet potato
- 1 tsp butter (for sweet potato)
- 1 cup asparagus spears, trimmed
- 1/2 tbsp olive oil (for asparagus)
- Pinch of sea salt
Instructions
- Rub chicken with olive oil, garlic powder, dried parsley, salt, and black pepper. Grill or pan-sear until juicy with a golden char.
- Poke a few holes in the sweet potato, wrap it in foil, and bake at 400°F for 45 minutes, or microwave for a quicker option. Once done, slice it open and fluff with butter.
- Toss asparagus with olive oil and a pinch of sea salt. Sauté or roast until tender and bright green.
- Build your plate by stacking the grilled chicken, asparagus, and buttery sweet potato.
- Serve hot and finish with a sprinkle of sea salt or a dash of lemon juice for extra freshness.
