Ingredients

  • 4 chicken thighs
  • 1/4 cup butter
  • 2 tablespoons mixed herbs (e.g., thyme, rosemary, parsley)
  • Salt and pepper to taste
  • 500g carrots, peeled and chopped
  • 2 tablespoons olive oil
  • 1kg potatoes, peeled and chopped
  • 1/2 cup cream
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the butter with the herbs, salt, and pepper.
  3. Rub the herb butter mixture all over the chicken thighs.
  4. Place the chicken thighs in a baking dish.
  5. Toss the chopped carrots with olive oil, salt, and pepper, then arrange them around the chicken.
  6. Roast in the oven for 30-40 minutes, until the chicken is cooked through and the carrots are tender.
  7. While the chicken and carrots are roasting, boil the potatoes in salted water until tender.
  8. Drain the potatoes and mash them. Stir in the cream and season with salt to taste.
  9. Serve the herb butter chicken with roasted carrots and creamy mash.

Notes

For added flavor, marinate the chicken in the herb butter mixture for an hour or overnight before cooking. Customize the vegetables by adding other favorites like potatoes or green beans.
