- 2 bone-in or boneless chicken thighs
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1/4 cup diced onions
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
- 2 medium red potatoes, chopped
- 2 tbsp sour cream
- Salt, pepper, and garlic powder to taste
- 3 large carrots, peeled and halved
- 1 tbsp olive oil
- 1 tsp honey or maple syrup
- 1/2 tsp thyme
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs for about 4-5 minutes on each side. Add butter, garlic, diced onions, and Italian seasoning. Cover and simmer for 10 more minutes.
- While the chicken cooks, boil the chopped potatoes in salted water until fork-tender. Drain and mash with butter, sour cream, salt, pepper, and a sprinkle of garlic powder.
- Toss the halved carrots with olive oil, thyme, salt, and honey. Roast in the oven at 400°F for 20 minutes or sauté until tender.
- Spoon mashed potatoes onto your plate, top with the herb butter chicken, and drizzle pan juices over the chicken.
- Serve with roasted or sautéed carrots on the side and garnish with fresh parsley.
