A delightful dessert combining creamy white chocolate and tart raspberries, perfect for celebrations or as a sweet treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup fresh raspberries
  • 1 cup white chocolate, melted (for drizzle and cake)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. Add the flour mixture to the butter mixture alternately with the milk, starting and ending with the flour mixture. Mix just until combined.
  7. Gently fold in the raspberries and half of the melted white chocolate.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes. Then, remove it from the pan and cool completely on a wire rack.
  11. Once cool, drizzle with the remaining melted white chocolate and decorate with additional fresh raspberries if desired.

Notes

For best results, gently fold in raspberries to prevent breaking, use room temperature ingredients, and avoid overmixing.
