- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup granulated sugar (for caramel layer)
- 6 tbsp unsalted butter, cubed (for caramel layer)
- 1/2 cup heavy cream (for caramel layer)
- 1 tsp sea salt (for caramel layer)
- 1 cup heavy cream (for chocolate ganache)
- 8 oz semi-sweet chocolate, chopped (for chocolate ganache)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture into the bottom of the springform pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract and sour cream until well combined.
- Pour the cheesecake filling over the cooled crust in the pan.
- Bake the cheesecake for 55-60 minutes, until the center is set but still slightly jiggly. Allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the caramel layer, heat sugar in a saucepan over medium heat, stirring until it melts and turns amber in color. Add cubed butter and stir until melted. Slowly pour in the heavy cream while stirring until combined. Let it boil for 1 minute and remove from heat. Stir in sea salt and allow to cool slightly before pouring over the chilled cheesecake.
- For the ganache, heat heavy cream in a saucepan until it simmers. Pour it over the chopped chocolate in a bowl. Let it sit for 5 minutes, then stir until smooth. Allow to cool slightly, then pour over the caramel layer.
- Refrigerate the cheesecake for another hour until the ganache is set.
Notes
Ensure your cream cheese is perfectly softened for a smooth filling. Allowing the cheesecake to chill overnight gives the best texture. Use high-quality chocolate for the ganache.
