Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup granulated sugar (for caramel layer)
  • 6 tbsp unsalted butter, cubed
  • 1/2 cup heavy cream (for caramel layer)
  • 1 tsp sea salt
  • 1 cup heavy cream (for ganache)
  • 8 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of the springform pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, beating well after each addition.
  6. Mix in the vanilla extract and sour cream until well combined.
  7. Pour the cheesecake filling over the cooled crust.
  8. Bake for 55-60 minutes, or until the center is set but slightly jiggly.
  9. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  10. For the caramel layer, heat sugar in a saucepan over medium heat. Stir constantly until it melts and turns amber in color.
  11. Add cubed butter and stir until melted. Slowly pour in heavy cream while stirring. Let it boil for 1 minute.
  12. Remove from heat and stir in sea salt. Let it cool slightly, then pour over the chilled cheesecake.
  13. For the ganache, heat the cream in a saucepan over medium heat until it simmers.
  14. Pour the hot cream over the chopped chocolate in a bowl. Let it sit for 5 minutes, then stir until smooth.
  15. Allow the ganache to cool slightly, then pour it over the caramel layer.
  16. Refrigerate the cheesecake for another hour until the ganache is set.

Notes

Make sure your cream cheese is softened for easier mixing. Don’t rush the cooling process; letting it chill overnight leads to the best texture.
