A creamy cheesecake with tropical mango flavor and juicy blackberries, perfect for special occasions or sweet treats at home.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tbsp granulated sugar
- 2 cups cream cheese, softened
- 1 cup sour cream
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup fresh mango puree
- 1 tbsp lemon juice
- 1 cup fresh mango, diced
- 1 cup fresh blackberries
- 2 tbsp honey or sugar (optional)
Instructions
- Preheat the oven to 325°F (165°C). Grease and line a 9-inch springform pan.
- For the crust, mix the graham cracker crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of the prepared pan.
- Bake for 8-10 minutes, then remove from the oven and set aside to cool.
- For the cheesecake filling, beat the cream cheese in a large bowl until smooth.
- Add the sour cream, sugar, eggs, vanilla extract, mango puree, and lemon juice. Mix until fully combined and creamy.
- Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
- Bake the cheesecake for 45-50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool.
- After it cools, refrigerate the cheesecake for at least 4 hours or overnight for the best results.
- For the topping, combine the diced mango, blackberries, honey (or sugar), and lemon juice in a bowl. Stir gently to combine.
- Once the cheesecake has chilled and set, spoon the mango and blackberry topping over it.
- Slice and serve!
Notes
Make sure the cream cheese is softened for easier mixing. Store leftovers in the refrigerator for 3-4 days or freeze for longer storage.
