Description

A creamy cheesecake with tropical mango flavor and juicy blackberries, perfect for special occasions or sweet treats at home.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup fresh mango puree
  • 1 tbsp lemon juice
  • 1 cup fresh mango, diced
  • 1 cup fresh blackberries
  • 2 tbsp honey or sugar (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). Grease and line a 9-inch springform pan.
  2. For the crust, mix the graham cracker crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of the prepared pan.
  3. Bake for 8-10 minutes, then remove from the oven and set aside to cool.
  4. For the cheesecake filling, beat the cream cheese in a large bowl until smooth.
  5. Add the sour cream, sugar, eggs, vanilla extract, mango puree, and lemon juice. Mix until fully combined and creamy.
  6. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
  7. Bake the cheesecake for 45-50 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for 1 hour to cool.
  9. After it cools, refrigerate the cheesecake for at least 4 hours or overnight for the best results.
  10. For the topping, combine the diced mango, blackberries, honey (or sugar), and lemon juice in a bowl. Stir gently to combine.
  11. Once the cheesecake has chilled and set, spoon the mango and blackberry topping over it.
  12. Slice and serve!

Notes

Make sure the cream cheese is softened for easier mixing. Store leftovers in the refrigerator for 3-4 days or freeze for longer storage.
