- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 3 large eggs
- 1 cup heavy cream
- 1 tsp vanilla extract
- 1 cup heavy cream (for topping)
- 8 oz semi-sweet chocolate, chopped
- 1/2 cup chopped peanuts
- Whipped cream for garnish
- Chocolate drizzle for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- Mix the chocolate cookie crumbs and melted butter in a medium bowl until well combined. Press this mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the creamy peanut butter and beat until well combined.
- Add the eggs one at a time, beating well after each addition.
- Stir in the heavy cream and vanilla extract until thoroughly mixed.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes, until the center is set and the edges are lightly browned.
- Cool completely on a wire rack.
- To make the topping, heat 1 cup of heavy cream in a small saucepan until it begins to boil. Remove from heat and pour over the chopped semi-sweet chocolate. Let sit for 5 minutes, then stir until smooth.
- Pour the chocolate ganache over the cooled cheesecake and sprinkle with chopped peanuts.
- Refrigerate for at least 4 hours, or overnight.
- Before serving, garnish with whipped cream and a drizzle of chocolate sauce.
Notes
Ensure cream cheese is at room temperature for a smoother filling. Can be made in advance and stored in the refrigerator for up to a week.
