Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup heavy cream (for topping)
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup chopped peanuts
  • Whipped cream for garnish
  • Chocolate drizzle for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Mix the chocolate cookie crumbs and melted butter in a medium bowl until well combined. Press this mixture into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat the softened cream cheese and granulated sugar until smooth.
  4. Add the creamy peanut butter and beat until well combined.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the heavy cream and vanilla extract until thoroughly mixed.
  7. Pour the filling over the crust in the springform pan.
  8. Bake for 50-60 minutes, until the center is set and the edges are lightly browned.
  9. Cool completely on a wire rack.
  10. To make the topping, heat 1 cup of heavy cream in a small saucepan until it begins to boil. Remove from heat and pour over the chopped semi-sweet chocolate. Let sit for 5 minutes, then stir until smooth.
  11. Pour the chocolate ganache over the cooled cheesecake and sprinkle with chopped peanuts.
  12. Refrigerate for at least 4 hours, or overnight.
  13. Before serving, garnish with whipped cream and a drizzle of chocolate sauce.

Notes

Ensure cream cheese is at room temperature for a smoother filling. Can be made in advance and stored in the refrigerator for up to a week.
