Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup heavy cream (for topping)
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup chopped peanuts
  • Whipped cream for garnish
  • Chocolate drizzle for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Mix the chocolate cookie crumbs and melted butter until well combined.
  3. Press the mixture into the bottom of the prepared pan to form the crust.
  4. Beat the cream cheese and sugar together until smooth.
  5. Add peanut butter and mix until combined.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in heavy cream and vanilla extract until well mixed.
  8. Pour the filling over the crust in the springform pan.
  9. Bake for 50-60 minutes, or until the center is set and the edges are lightly browned.
  10. Cool completely on a wire rack.
  11. Heat heavy cream in a small saucepan until it just begins to boil.
  12. Remove from heat and pour it over the chopped chocolate. Let it sit for 5 minutes, then stir until smooth.
  13. Pour the chocolate ganache over the cooled cheesecake and sprinkle with chopped peanuts.
  14. Refrigerate for at least 4 hours, or overnight.
  15. Garnish with whipped cream and drizzle of chocolate sauce before serving.

Notes

For a less sweet cheesecake, reduce the amount of sugar. If desired, add banana slices on top of the filling before the ganache.
