  • 3 (8 oz) packages cream cheese, softened

  • 3 large eggs

  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 1 cup whole milk
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a springform pan. Bake for 10 minutes, then let it cool.
  2. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract. Add the heavy cream and cornstarch, blending until creamy. Pour the filling over the cooled crust and bake for 55-60 minutes, or until the center is set. Let it cool, then refrigerate for at least 4 hours.
  3. In a saucepan over medium heat, heat the milk. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch. Gradually add the warm milk to the egg mixture while whisking. Return this mixture to the saucepan and cook until it thickens. Remove from heat and stir in the vanilla and butter. Let it cool, then spread it evenly over the chilled cheesecake.
  4. Heat the heavy cream until it simmers. Pour this over the chocolate chips and stir until smooth and glossy. Add the vanilla extract and let it cool slightly. Pour the ganache over the pastry cream layer, spreading it evenly. Refrigerate for at least 2 hours before serving.

Notes

Serve chilled, optionally topped with whipped cream or chocolate shavings. Store covered in the refrigerator for up to 5 days or freeze for up to 2 months.
